The Best Crispy Roasted Potatoes

Whenever it’s a holiday, my dad always makes delicious roasted potatoes! With all of the cold weather in Boston, I have been craving lots of warm food at night! So I have been experimenting with different roasted potato recipes and I have finally come up with my own to share with you all! I highly recommend making these vegan & gluten-free crispy roasted potatoes if you are craving a little comfort food! I love to have them with some type of protein like salmon or tofu, but they are also super delicious as a snack on their own.

I know that this recipe has quite a lot of salt and olive oil in it, but it truly makes such a difference in the flavor, plus most of the salt gets thrown out in the boiling water. Now that I know that potatoes can taste this good, it’s the only way I make them now! Let me know what you think if you end up making these!! 🙂

Ingredients:

-1 bag of small potatoes

-Salt & pepper

-Olive oil

-Optional: Chives

Directions:

1. Preheat the oven to 350 degrees Fahrenheit.

2. Boil some water in a saucepan with 1/2 cup of salt

3. Place the small potatoes in the boiling salt water for 20 minutes until they are soft.

4. Once the potatoes are soft, take them out of the saucepan and lay them out on a baking sheet.

5. Using another baking tray, push down on the potatoes with another baking tray so that each potato has been flattened.

6. Finally drizzle with lots of olive oil, salt, and pepper and roast for about 45 minutes-1 hour at 350 degrees Fahrenheit until they are super duper crispy!

Optional: garnish with some chives
