Chocolate Chip Muffins
These gluten-free chocolate chip muffins are so fluffy and delicious. They are gluten-free, dairy-free, and refined-sugar-free, and they are definitely a crowd-favorite! I think the key to baking muffins is the type of gluten-free baking flour that you use. I highly recommend Bob’s Red Mill 1 to 1 Gluten-Free Baking Flour, as it has the perfect mix of ingredients! I love using chocolate chunks for the chocolate chips in this recipe, as it gives you a little extra bite of chocolate! I hope you enjoy these muffins as much as I do! Happy baking!
Ingredients:
-2 cups Gluten Free baking flour
-½ cup coconut sugar
-½ cup almond milk
-1 Teaspoon vanilla extract
-Pinch of salt
-2 eggs
-2 heaping Tablespoons of coconut oil
-1 Teaspoon baking soda
-1 Teaspoon baking powder
-¼ cup maple syrup
-¼ cup melted vegan butter
-1 cup chocolate chips/chunks
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Combine all of the ingredients in a bowl, except the chocolate chips, and mix in a KitchenAid stand mixer on high speed until everything has combined. The gluten-free dough tends to be a bit sticky, so it makes it a lot smoother to use a blender, rather than mixing with a whisk by hand. Once your batter is nice and smooth, stir in the chocolate chips.
3. Grease a muffin tin with coconut oil and place about a tablespoon of batter into your muffin tray for each muffin. Make sure that each muffin has a few chocolate chips in it.
4. Bake for 25 minutes until a toothpick comes out clean.
7. Leave to set for 10 minutes and then enjoy!
