Vegan & Gluten-Free Chocolate Chip Oatmeal Cookies
I have been obsessed with oats (and chocolate chips) lately, and I thought that I would continue on with last week’s oat theme with these vegan and gluten-free chocolate chip cookies! These healthy cookies are insanely delicious and barely lasted a few days at my house! I love how they are super chewy and soft and you could even justify having them for breakfast because they have oats in them! 😉 The chocolate chips just melt in your mouth and they would be a perfect healthy lunchbox treat with school starting back up again! Ingredients:
-1/2 cup honey
-1 cup coconut shreds
-1 cup gluten-free flour
-1 tsp baking soda
-1 tsp salt
-1 cup of chocolate chips
-1 tsp vanilla extract
-2 flax eggs (2 tablespoons of ground flax with 4 tbsp water)
-1/2 cup coconut sugar
-227 grams vegan butter (I love Miyokos Vegan Butter)
Directions:
1. Preheat the oven to 350 degrees Fahrenheit
2. Mix all of your ingredients together in a bowl until everything has come together evenly.
3. Form the cookie dough into cookie rounds on a greased sheet pan.
4. Place in the oven to bake at 350 degrees Fahrenheit for around 25 minutes, but keep an eye on them because they might burn after 20 minutes!
5. Take out of the oven and Enjoy! They taste AMAZING when warm!
