Chocolate Peanut Butter Crack Bars

I love any type of chocolate peanut butter bar! I am obsessed with peanut butter and chocolate and one day I decided to create these vegan, gluten-free, and refined-sugar free peanut butter crack bars to combine this salty, sweet combo! They are so delicious and it was so fun creating a healthier caramel for the second layer of these vegan peanut butter crack bars. They are perfectly crunchy with all the best ingredients that will make you feel good!

Ingredients:

-1 box of Simple Mills sea salt crack bars

-1 bar of vegan chocolate

-1 cup of peanut butter

-1/2 cup coconut sugar

-2 heaping tablespoons of coconut oil

-1/2 cup water

-optional: top with desiccated coconut

Directions:

1. Line a small tray with tinfoil, and evenly spread around all the Simple Mills crackers.
2. Then it’s time to make your caramel! In a saucepan melt 1 cup PB, 1/2 cup coconut sugar, 2 heaping tbsp of coconut oil, and 1/2 cup water. If you want it sweeter, feel free to add another 1/2 cup coconut sugar and stir until it has thickened like regular caramel.
3. Once melted, pour over the crackers, and with a spoon, gently mix everything together and try to coat the crackers evenly with the caramel.
4. Now melt your chocolate bar over a Bain-Marie and once melted pour over the caramel crackers!
5. Feel free to sprinkle coconut shreds on top! Once evenly coated, put in the fridge to set!
6. Enjoy!

Recipe notes:

* A bain-marie is when you take a saucepan and fill it up halfway with water and then place a heatproof bowl over the saucepan in order to slowly melt the chocolate.

* Store in an airtight container in the fridge

* My favorite vegan and refined sugar free dark chocolate is Lily’s Dark Chocolate

Now melt your chocolate bar over a Bain-Marie and once melted pour over the caramel crackers! Feel free to sprinkle coconut shreds on top of the peanut butter crack bars! Once evenly coated, put in the fridge to set!
