My Top Ten Vegan & Gluten-Free Pantry Staples

Hey everyone,

I hope you are all well and staying healthy throughout this scary and unprecedented time with COVID19. I feel slightly uncomfortable sharing my regular content especially with such a sensitive and upsetting atmosphere in the world right now, but I think it’s important to continue with our normal routines, all while creating positivity in this scary time so that we all feel a little more like ourselves! I thought it would be useful to share my Top Ten Vegan and Gluten-Free Pantry Staples this week so that you could stock up at the supermarket every few weeks to have while social distancing! The best part about all these vegan and gluten-free pantry staples is that you can turn them into any meal or dessert that you like! In fact, they are perfect to put in your buddha bowls (check out the How to Build a Buddha Bowl post on my site for some inspo!)

1. Chickpeas

I think that I eat chickpeas almost every day, even though they make come in different forms like hummus, chickpea crips, etc, they are so versatile and delicious! Feel free to roast them in the oven for a crunchy treat or blend them in a food processor with a little garlic, olive oil, and salt and pepper for a hummus dip with some crudités!

2. Peanut Butter 

If you know me, you will know that I am completely obsessed with peanut butter! I use it in a few of my dessert recipes, like my Millionaire’s Shortbread, and I put it on my porridge every morning. I also love having it as a snack- I love mixing a little peanut butter with an apple! Yum!

3. Almonds

I use almonds almost every day in my baking! I find it hard to get almond flour at some supermarkets so sometimes I just blend up almonds in my food processor and I then have my own almond flour, and it’s a lot cheaper than buying it in the store! Almonds are great to have as a snack, in energy balls, and they serve as a great flour substitute in recipes!

4. Gluten Free Rolled Oats 

Okay, if you’ve seen my Intsagram feed, you can probably already tell that I may have a slight obsession with porridge! As someone with celiac disease it’s important for me to use gluten-free oats, so every morning I always make a delicious bowl of porridge! Sometimes when I know I won’t have time in the morning, I like to make overnight oats with some bircher muesli. Have fun with oats and if you have kids, get them involved by letting them decorate their bowl however they please!

5.  Coconut Sugar 

As someone who bakes almost everyday, I always have coconut sugar in my pantry! I love using this as a substitute for refined sugar and it gives a delicous coconut taste to baked goods!

6. Quinoa 

Quinoa is one of my abosolute favorite grains to have on hand! I love creating grain bowls with lots of veggies and quinoa as the base of the meal. It’s packed with protein, and if you cook it with a bouillon cube, salt, pepper, and a little dash of lemon juice it has so much flavor!

7. Dates 

This is one of the fruits that I don’t think I could live without! I always chop up one or two dates to have with my porridge every morning because it’s like a little sweet surprise in every bite! They also serve as a great base in energy ball recipes, which I have a ton of different recipes for on my blog in the dessert section.

8. Marinara Sauce 

This staple may seem a little random, but I swear it really helps to have this on hand if you are in need of a quick dinner one night. When I’m starving and don’t have a lot of time to make dinner, I usually just throw some zuchinni noodles in a pan with some marinara sauce, chickpeas (another one of my staples!) and some salt and pepper and then dinner is served!

9. Coconut Oil 

I love using coconut oil in my recipes as it’s a fabulous substitute for butter! They also have coconut oil sprays available now which is amazing if you are looking for a more efficient way to greese your pans!

10. Chocolate 

You may laugh at this staple, but I don’t think I could live without chocolate! I am a chocoholic! My favorite chocolate to have on hand is Lily’s Sweets, Hu Chocolate, and Ombar Chocolate. They are all vegan, gluten-free, and refined-sugar-free, yet soooo delicious!
