Peanut Butter Chocolate Chunk Cookies

I’ve always been a big fan of peanut butter, but I’ve never actually made peanut butter cookies, not to mention peanut butter chocolate chunk cookies. Earlier this week I created two different types of peanut butter cookies, plain peanut butter, and then chocolate chunk peanut butter, and I am definitely a fan of the chocolate peanut butter combination! However, if you’re not a big fan of chocolate, feel free to omit the chocolate chunks in the recipe.

These peanut butter chocolate chunk cookies are so easy to make and literally only use one bowl so it’s a super fast clean-up as well! I’ve already made this recipe three times this week since finishing my semester of school last week, and everyone in my house has loved them! They are gooey, indulgent, somewhat crunchy, and just a burst of the best flavor combination ever! I hope you enjoy these cookies as much as I love them!

Ingredients:

-1 cup of gluten-free flour (I’m a big fan of Bob’s Red Mill)

-1/2 cup coconut sugar

-1/2 cup peanut butter

-1/2 cup vegan butter (I’m a big fan of Miyoko’s Creamery, as it has very simple ingredients)

-1 tsp of baking powder

-1 tsp of baking soda

-pinch of salt

-1 egg

-1/2 cup vegan chocolate chunks

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Place all ingredients, except the chocolate chunks into a bowl.

4. Mix the ingredients together until a nice cookie dough has formed and then fold in the vegan chocolate chunks.

5. Grease a baking tray with coconut oil.

6. Roll about two tablespoons of the cookie dough into balls and then flatten them into cookies and place them onto the baking tray.

7. Cook the cookies at 350 degrees Fahrenheit for 15-20 mins until golden and then enjoy!
