Peanut Butter Cup Energy Balls

A few week’s ago, my friend asked me to make a peanut butter cup energy ball recipe, and as a massive peanut butter and chocolate fan, I was so excited for the challenge! I love love love energy balls because they are such an amazing afternoon or morning snack when you are craving something filling and something that will satisfy that chocolate craving. In this recipe, I used almond flour to make the energy balls more smooth, but if you want to have a crunchier texture, feel free to just use regular almonds. The combination of chocolate and peanut butter is such a dream, and I’m obsessed with the small chunks of chocolate that you get with each bite just by pulsing with the food processor!

I coated these energy balls in lots of vegan chocolate to give that shell-feeling of Peanut Butter Cups to the energy balls, but they taste just as delicious without the chocolate if you want to speed up the recipe process!

I hope you love these Peanut Butter Cup Energy Balls as much as I do! They are such a great vegan dessert and will please any crowd, especially if you are in a time-crunch as it’s a very quick recipe! Ingredients:

-2 cups of pitted Medjool dates

-1 cup of almond flour

-2 Tablespoons of peanut butter

-1 heaping Tablespoon of coconut oil

-4 Tablespoons of cacao powder

-1 Tablespoon of maple syrup

-1/2 cup of vegan chocolate chips

Directions:

1. Place all of the ingredients, except the chocolate chips, into a food processor and blend until it starts to form a smooth paste.

2. Mix in the chocolate chips and pulse just until they have broken down, but you still have small chunks of chocolate in your mixture.

3. Take small handfuls of the mixture and roll it into balls.

4. Set aside your energy balls, and start to melt the chocolate over a Bain-marie.

5. Once your chocolate has melted and it’s nice and smooth, dip your peanut butter cup energy balls into the chocolate one-by-one.

6. Once all of your energy balls are coated in chocolate, leave them to set in the fridge and then enjoy!

Recipe Notes:

* A bain-marie is when you take a saucepan and fill it up halfway with water and then place a heatproof bowl over the saucepan in order to slowly melt the chocolate.

* Store in an airtight container in the fridge

* My favorite vegan and refined sugar free dark chocolate is Lily’s Dark Chocolate
