Vegan Chocolate Chip Cookies
If you are a cookie fan, you must give these vegan chocolate chip cookies a go! They are insanely delicious and are perfectly soft! They rise up so much that they are almost cake-like! It’s a great tasting paleo recipe, and they are a delicious vegan dessert. I love to make a batch of these on a Sunday night, and store them in the fridge to munch on in the week to satisfy my sweet tooth!
Ingredients:
-1 cup almond flour
-2 tbsp oat flour
-Sprinkle of Salt
-1/2 tsp baking powder
-1 tbsp coconut sugar
-1/2 cup coconut shreds
-1 tsp vanilla
-2 tbsp melted coconut oil
-2 tbsp maple syrup
-2 tbsp almond milk
-1 chia egg (1 tbsp chia seeds and 2.5 tbsp water) let sit until it forms a gel
-1/2 cup of vegan chocolate chips
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Create a chia egg by mixing 1 tbsp chia seeds and 2.5 tbsp of water and let it sit for around 5 minutes until it forms a gel.
3. Place all ingredients, except the chocolate chips into a bowl.
4. Mix the ingredients together until a nice cookie dough has formed and then fold in the vegan chocolate chips.
5. Grease a baking tray with coconut oil.
6. Roll about two tablespoons of the cookie dough into balls and then flatten them into cookies and place them on the baking tray.
7. Cook the cookies at 350 degrees Fahrenheit for 20 mins until golden and then enjoy!
