Raspberry Energy Balls
I know that Valentine’s Day has already come and gone, but I think that the entire month of February should be dedicated to love and the color pink! So, to celebrate this fabulous month, I’m sharing my paleo, gluten-free, vegan, and refined-sugar-free raspberry energy ball no bake recipe. I love to make these to munch on for an afternoon snack throughout the week, and they are super portable, so they are perfect to bring to work/school. If you don’t like raspberries, I’m sure they would taste great with any other freeze-dried fruit, but I haven’t tried it yet. These vegan raspberry energy balls taste so decadent, and I love the taste of the freeze-dried raspberries. I hope you love them just as much as I do!
Ingredients:
-1 cup hazelnuts
-2 tbsp freeze-dried raspberry powder
-2 cups pitted Medjool dates
-2 tablespoons of peanut butter
-1 heaping tablespoon of coconut oil
-4 tbsp cacao powder
Directions:
1. Blend the hazelnuts, freeze-dried raspberry powder, Medjool dates, peanut butter, coconut oil, and cacao powder in a food processor until everything has blended together.
2. Once your date mixture is nice and smooth, roll the mixture into small balls.
3. Take some of the freeze-dried raspberries and place them in a bag so that you can smash it with a rolling pin until it feels like a powder.
4. Once some of the freeze-dried raspberries have been turned into a powder, sprinkle some raspberry powder on top of each date ball! Let them set in the fridge and then enjoy these delicious vegan raspberry energy balls!
